Carbonara

For 4 people:

500g penne
Smoky lardoons (sort of smoky bacon)
Olive oil
2 egg yolks
Cream or crème fraîche or semi-skimmed milk
Onion
Grated cheese (parmesan or emmenthal)
Salt
Ground pepper

Cook the penne in salted boiling water until al dente.
While the pasta is cooking, slowly fry the lardoons together with the onion chopped into slices.
Add the cream and toss slowly.
Put aside.
When the penne is cooked: drain it and toss it immediately with the cooked lardoons, onions and cream.
Add the egg yolks and keep on tossing.
Season well to taste and add the grated cheese once in the plate! It will melt and taste even better!
You can serve some salad with the carbonara….
